During her presentation, Elisa Lopez shared about the Origin Criteria of Mezcal, specifically the process followed by CIDAM to verify that it is safe and produced in an area designated by law. This covers the entire value chain from the agave plantation till the filling and labeling of bottles.
CIDAM’s presentation was joined by Zaida Selenia Coronado, who spoke about the aspects to note when carrying out an origin procedure.
Exoap then shared about its positioning within the mezcal industry. It assists mezcal companies in their export process, as well as executes business missions for the Netherlands, France and Germany markets.
The presentation focused on the national and international dimensions of exports. In terms of the national dimension, exoap gave an overview of the formal operations and estimated investment costs involved in starting a mezcal brand.
In terms of the international dimension, exoap emphasised the value of tapping into the Free Trade Agreements with Mexico to select the best export markets. It is also important to consider the safety and labeling criteria to present the product to importers overseas.
Exoap further suggested the need to plan the bottle costs properly in the context of the Incoterms.
Finally, there was a demonstration using the exoap platform to obtain the Certificate of Origin within the framework of the FTA between Mexico and the European Union.
Thereafter, Alexis Robledo, Datasur’s representative for Mexico, Ecuador and Paraguay, spoke about the value of using Business Intelligence (BI) for exports.

This was followed by a demonstration to show attendees how to use the platform to gather data on the maritime export of mezcal.
Finally, Kevin Calderón, founder of Botánica del Alma, presented the benefits of using cocktails to promote a mezcal brand.
He addressed the elements needed to create a balanced cocktail, considering the characteristics of each mezcal. He also explained about the importance of taking into account global cocktail trends.
